Chef introduction
From Chef Luxo’s at Luxo Kitchen, this bowl brings together the details that make a simple meal satisfying: browned chicken, tender peppers, crisp lettuce and a bright, creamy finish. The key is to cook the chicken and vegetables separately, then assemble everything just before serving. That keeps each ingredient’s texture distinct and makes leftovers easier to pack.
Why this technique works
Separate cooking protects texture. Peppers and onions release moisture. Removing them before cooking the chicken helps the meat brown instead of sitting in vegetable juices.
Even pieces cook more predictably. Cutting chicken into roughly 2 cm pieces makes it easier to cook the centres without drying out smaller pieces.
A little space improves browning. A single layer lets moisture escape. Two batches work better than crowding a small skillet.
Yogurt creates a creamy finish. Thick Greek yogurt makes a spoonable sauce without needing mayonnaise. Lime adds brightness to balance the rice, beans and chicken.
Warm and cool ingredients add contrast. Fresh lettuce, tomatoes and avocado finish the bowl after cooking, so they retain their texture.
Ingredients
For the chicken
- 700 g (about 1½ lb) raw boneless, skinless chicken breasts, cut into 2 cm pieces
- 1 tablespoon olive oil, divided for cooking
- 1 tablespoon lime juice
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon fine salt
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper, optional
For the bowls
- 2 cups cooked brown rice, approximately 390 g
- 1½ cups drained and rinsed black beans, approximately 255 g
- 1 cup corn kernels, approximately 165 g, thawed if frozen
- 2 medium bell peppers, thinly sliced
- 1 medium red onion, thinly sliced
- 1 teaspoon olive oil
- 2 cups shredded romaine lettuce
- 1 cup diced tomatoes
- 1 medium avocado, approximately 150 g flesh, sliced
- 2 tablespoons chopped fresh cilantro, optional
- 1 lime, cut into wedges, for serving
For the creamy lime sauce
- ¾ cup (170 g) plain nonfat Greek yogurt
- 1 tablespoon lime juice
- 1 small garlic clove, finely grated
- ¼ teaspoon ground cumin
- Pinch of salt, to taste
- 1–2 tablespoons water, as needed
Ingredient notes: Chicken weight is raw; rice and bean measurements are ready-to-use cooked or drained amounts. Can sizes vary, so measure the drained beans. Choose thick Greek yogurt for a sauce that clings to the chicken.
Chef tips
Dry the chicken before seasoning. Excess surface water slows browning.
Taste components together. Try a bite of rice, chicken and sauce before adding more salt to the whole dish.
Use the juices. Spoon any juices from the cooked chicken’s clean resting plate over the rice.
Control the sauce thickness. Add water gradually; you can thin thick yogurt more easily than you can thicken a watery sauce.
Add avocado last. Cut it just before eating for the best colour and texture.
Common mistakes and how to avoid them
| Mistake | What happens | How to avoid it |
|---|---|---|
| Crowding the skillet | Chicken releases moisture and browns poorly | Cook in two batches with space between pieces |
| Using 2 cups of dry rice | Makes far more rice than intended | Measure 2 cups after cooking |
| Cooking chicken by colour alone | Browned meat may still be undercooked | Check the thickest pieces with a thermometer |
| Letting spices burn | Creates a bitter coating | Reduce heat if the pan smokes or spices blacken |
| Storing lettuce under hot food | Leaves become limp and wet | Refrigerate fresh toppings separately |
| Pouring on all the sauce before storing | Makes reheating awkward | Keep sauce in a separate small container |
Substitutions
| Ingredient | Substitute | What changes |
|---|---|---|
| Chicken breast | Equal weight boneless chicken thighs | Richer flavour; timing and nutrition change; cook to 165°F/74°C |
| Brown rice | Equal volume cooked white rice or quinoa | Texture, fibre and nutrition change |
| Black beans | Equal volume drained pinto beans | Similar creamy texture with a slightly different flavour |
| Greek yogurt | Thick unsweetened dairy-free yogurt | Makes the sauce dairy-free; protein depends on the product |
| Avocado | Omit or add extra diced tomato | Less fat and fewer calories |
| Bell peppers | Sliced zucchini | Cook until tender and avoid excess moisture |
| Fresh garlic | ¼ teaspoon garlic powder | Milder sauce with no raw garlic pieces |
| Cilantro | Chopped parsley or omit | Changes the herbal finish |
For a lower-carbohydrate variation, replace the rice with cooked cauliflower rice. Beans and corn still contribute carbohydrates. Recalculate nutrition for all substitutions.
Storage
Refrigerate cooked components promptly in shallow containers, within 2 hours of cooking, or within 1 hour if the surrounding temperature is above 90°F (32°C). Keep the refrigerator at 40°F (4°C) or below. Do not leave cooked rice on the counter to cool completely.
Chicken, rice, beans, corn and cooked vegetables: Refrigerate for up to 3–4 days. If using previously cooked rice, count from its original cooking date.
Sauce and fresh toppings: Refrigerate separately and use within 3–4 days, or sooner if the ingredients’ freshness requires it. Lettuce and tomato texture is best within 1–2 days; slice avocado at serving time.
Freezer: Freeze the cooked components without lettuce, raw tomato, avocado or yogurt sauce for up to 2 months for best quality. Thaw overnight in the refrigerator.
Reheating
Microwave: Put only the cooked components in a microwave-safe bowl. Sprinkle with 1–2 tablespoons water, cover loosely and heat in 60-second intervals, stirring between intervals. Check several places with a thermometer and continue until the food reaches 165°F (74°C). Add fresh toppings and sauce afterward.
Skillet: Add the cooked components to a skillet with a splash of water. Cover and warm over medium-low heat, stirring occasionally, until heated throughout to 165°F (74°C). Add the cold ingredients after reheating.
Reheat only the portion you intend to eat. Heating time varies by portion size and equipment.

Instructions
Prepare the ingredients
Slice the peppers and onion, rinse and drain the beans, and prepare the fresh toppings. Keep the lettuce, tomatoes and avocado separate from the raw chicken and its utensils. Have 2 cups of cooked rice ready.
Season the chicken
Pat the chicken dry with paper towel. Toss with the lime juice, paprika, cumin, garlic powder, oregano, salt, pepper and optional cayenne. No extended marinating time is required.
Sauté the peppers and onion
Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Add the peppers and onion. Cook for 6–8 minutes, stirring occasionally, until softened with lightly browned edges. Transfer to a clean plate.
Cook the chicken in batches
Add half the tablespoon of olive oil to the skillet, then half the chicken in a single layer. Leave it undisturbed for about 2 minutes before turning. Continue cooking, turning occasionally, for approximately 6–8 minutes in total, until the thickest pieces reach 165°F (74°C).
Transfer the cooked chicken to a clean plate. Repeat with the remaining oil and chicken. Reduce the heat slightly if the spices start to darken too quickly. Temperature, rather than colour or time alone, determines doneness.
Warm the beans, corn and rice
While the chicken cooks, combine the beans and corn in a small saucepan with 2 tablespoons water. Warm over medium-low heat for 3–4 minutes, stirring occasionally, then drain excess liquid. Warm the rice separately; if it is refrigerated leftover rice, reheat it thoroughly to 165°F (74°C).
Mix the lime yogurt sauce
Stir together the yogurt, lime juice, garlic, cumin and a pinch of salt. Add water, 1 tablespoon at a time, until the sauce is easy to drizzle. Taste and adjust the lime or salt if needed.
Assemble and serve
Divide the rice among four bowls, using ½ cup per bowl. Add the lettuce, chicken, peppers, onion, beans and corn. Finish with tomatoes, one-quarter of the avocado and one-quarter of the sauce. Scatter with cilantro and serve with lime wedges.
