Tender bites of golden chicken, perfectly cooked penne and a silky garlic-Parmesan sauce come together in one pan for an easy dinner with very little cleanup. This one-pot creamy chicken pasta tastes rich and comforting, but it uses simple ingredients and takes only 30 minutes from start to finish.

Cooking the pasta directly in the seasoned chicken broth gives every piece more flavor. The starch released by the pasta also helps the cream and Parmesan turn into a smooth sauceโ€”without opening a jar of prepared pasta sauce.

Why Youโ€™ll Love This Recipe

  • Ready in 30 minutes: A practical choice for busy weeknights.
  • One-pan cleanup: The chicken, pasta and sauce are all prepared in the same skillet.
  • Made from simple ingredients: No canned soup or jarred Alfredo sauce is needed.
  • Rich and satisfying: Garlic, cream and freshly grated Parmesan create a smooth, savory sauce.
  • Easy to customize: Add spinach, peas or broccoli when you want extra vegetables.

Important Ingredient Notes

Chicken: Boneless, skinless chicken breast cooks quickly and keeps the dish light. Cut it into evenly sized pieces so they finish cooking at the same time.

Pasta: Penne or rigatoni works best because the short tubes hold the creamy sauce. Pasta brands vary, so check it a minute or two before the package cooking time.

Chicken broth: Use low-sodium broth because Parmesan already adds salt. Keep a little extra broth or water nearby in case the pasta needs more liquid.

Heavy cream: Add it after the pasta is tender and keep the heat low. This helps the sauce stay smooth.

Parmesan: Freshly grate a block of Parmesan. Pre-shredded cheese often contains anti-caking ingredients and may produce a grainy sauce.

Ingredients For One Pot Creamy Chicken Pasta

Cooking Mode Disabled

1ยผ pounds (567 g) boneless, skinless chicken breasts, cut into 1-inch pieces

2 teaspoons Italian seasoning, divided

ยฝ teaspoon kosher salt, plus more to taste

ยฝ teaspoon freshly ground black pepper, divided

2 tablespoons olive oil

1 tablespoon unsalted butter

4 large garlic cloves, finely minced

3ยผ cups (780 ml) low-sodium chicken broth, plus more if needed

12 ounces (340 g) dry penne or rigatoni

ยพ cup (180 ml) heavy cream, preferably at room temperature

1 cup (100 g) finely grated Parmesan cheese, plus more for serving

ยผ teaspoon crushed red-pepper flakes, optional

2 tablespoons chopped fresh parsley

Instructions

  1. Season the chicken

Pat the chicken dry with paper towel. Toss it with 1 teaspoon Italian seasoning, the salt and ยผ teaspoon black pepper.

  2. Brown the chicken

Heat the olive oil in a large deep skillet over medium-high heat. Add the chicken in a single layer and cook for 5โ€“6 minutes, turning occasionally, until golden and cooked to an internal temperature of 165ยฐF (74ยฐC). Transfer the chicken to a clean plate.

  3. Cook the garlic

Reduce the heat to medium. Add the butter and minced garlic to the same skillet. Stir for about 30 seconds, just until fragrant; do not let the garlic brown.

  4. Cook the pasta

Pour in the chicken broth and scrape up the flavorful browned bits from the bottom of the pan. Add the dry pasta, the remaining 1 teaspoon Italian seasoning, the remaining ยผ teaspoon black pepper and the optional red-pepper flakes. Bring to a gentle boil, then reduce the heat to medium-low. Cover and simmer for 10โ€“12 minutes, stirring two or three times, until the pasta is just tender. If the pan becomes dry before the pasta is cooked, add extra broth or water ยผ cup at a time.

  5. Make the creamy sauce

Reduce the heat to low. Stir in the heavy cream. Add the Parmesan a handful at a time, stirring until each addition melts before adding more.

  6. Finish the dish.

Return the chicken and any collected juices to the skillet. Cook for 2โ€“3 minutes, stirring gently, until the chicken is hot and the sauce coats the pasta. The sauce will continue to thicken as it rests.

  7. Serve

Taste and adjust the salt if needed. Sprinkle with parsley and additional Parmesan, then serve immediately. Create individual image of these.

Note

  • Keep the sauce at low heat after adding the cream and Parmesan. High heat can make a cheese sauce separate or become grainy.
  • The pasta should have a little cooking liquid remaining before the cream is added. That starchy liquid is part of the sauce.
  • If the finished sauce becomes too thick, loosen it with a small splash of warm chicken broth.
  • Cut the chicken into equal pieces and avoid overcrowding the skillet. Brown it in two batches if the pan is small.
  • For a thicker sauce, let the finished pasta rest off the heat for 2โ€“3 minutes before serving.

Chef Masonโ€™s Success Tips

1. Let the chicken develop color

Dry chicken browns better than wet chicken. After adding it to the hot pan, leave it undisturbed briefly so a golden crust can form.

2. Stir the pasta during cooking

Because the pasta cooks in a smaller quantity of liquid than it would in a large pot of water, stir it several times to prevent sticking and promote even cooking.

3. Lower the heat before adding cheese

Parmesan melts more smoothly over low heat. Add it gradually instead of pouring it into the pan all at once.

4. Serve it promptly

The pasta continues absorbing sauce as it sits. Serve it while the sauce is loose and glossy, keeping extra warm broth available if it needs loosening.

Easy Variations

  • Add spinach: Stir in 2 packed cups of baby spinach with the cooked chicken and let it wilt into the sauce.
  • Add peas: Stir in 1 cup of frozen peas during the final 3 minutes of cooking.
  • Add broccoli: Add 2 cups of very small broccoli florets during the final 5โ€“6 minutes of the pastaโ€™s cooking time.
  • Use chicken thighs: Substitute an equal weight of boneless, skinless chicken thighs and cook them to at least 165ยฐF (74ยฐC).
  • Make it milder: Leave out the crushed red-pepper flakes.

What to Serve with Creamy Chicken Pasta

Balance the rich pasta with a crisp green salad, roasted vegetables or steamed green beans. Garlic bread also works well when you want a more generous, comforting meal.

Storage and Reheating

Allow leftovers to cool, then refrigerate them in an airtight container within 2 hours. Store for up to 3 days.

Reheat gently in a covered skillet over low heat or in short microwave intervals. Add a splash of milk or chicken broth and stir to loosen the sauce. Freezing is not recommended because cream sauces can separate and pasta can become soft after thawing.

Frequently Asked Questions

Expand All:

Can I use a different pasta shape?

Yes. Choose a short pasta with a cooking time similar to penne, such as rigatoni, rotini or farfalle. Different shapes and brands absorb liquid differently, so watch the pan and add a little extra broth if necessary.

Can I replace the heavy cream with milk?

Whole milk can be used, but the sauce will be lighter and thinner. Avoid boiling it after it is added. Skim milk is more likely to produce a watery sauce.

Why did my Parmesan sauce become grainy?

The most common causes are high heat and pre-shredded cheese. Lower the heat before adding freshly grated Parmesan, then stir it into the sauce gradually.

Can I make this recipe gluten-free?

You can use a certified gluten-free short pasta and gluten-free chicken broth. Gluten-free pasta may require a different amount of liquid and cooking time, so stir frequently and follow its texture rather than relying only on the clock.

How do I know when the chicken is safe to eat?

Insert an instant-read thermometer into the thickest chicken piece. It should reach 165ยฐF (74ยฐC).
